The olive oil is obtained from oil mills all around the Ibernian peninsula. Spain is one of the countries with more production and better ratings all around the world thanks to the DOPs that make sure that all the criteria are fulfilled.

The DOPs are one of the multiple queality schemes of the European Union. They make sure the product is from a special quality that only the geographic conditions can allow.

In Spain there are 32 different DOPs only for olive oil.

We don't have any certificated DOP in Salamanca but we do have an olive oil know. Is called Soleae.
